Fix typos in the Emacs user manual

* doc/emacs/calendar.texi (Holidays): Fix usage of non-ASCII
accents.
* doc/emacs/custom.texi (Init Rebinding): Fix a cross-reference.
* doc/emacs/dired.texi (Operating on Files): Make the
cross-reference to "VC Delete/Rename" be to a different manual in
the printed version.  (Bug#41100)
